Pickled Takana, a local specialty

Takana is an over-earnest herb of the Brassicaceae family and originates from Central Asia. The cultivation of takana became widely spread in the Aso region about half a century ago. In an effort to increase farmers' profits, pickled takana was shipped to the Kanto and Kansai regions. Aso Takana" is small, crisp, and spicy, and is grown in a high-cool climate with volcanic soil. The harvest, known as "takana folding," begins in March. The green "new pickles" are lightly pickled with less salt, while the "old pickles" are slowly pickled to a candy-like color. People in Aso eat freshly pickled Aso Takana in spring and enjoy old pickles all year round. Prices vary depending on the manufacturer and the volume, etc.

A hit product at Michi no Eki Aso! Slightly luxurious and stylish bread

The "Michi no Eki Aso" (Roadside Station Aso) has teamed up with a local bakery, "Mame no Ki" (Beanstalk), to sell the "Aso Panettone" as shown here. Panettone is a tube-shaped pancake eaten at Christmas in Italy. At first, "Mame-no-ki" also made a tube-shaped pancake by spreading almond cream and sprinkling sugar on it, but it did not sell well.
So, they changed the shape to a box and added almond cream topped with almonds, walnuts, cashews, pumpkin seeds, cranberries, and cherries. The product quickly became popular and was promoted to a hit item at the roadside station. The luxuriousness of the toppings has been appreciated as a good souvenir. The cakes have a good balance of just the right amount of moistness, firmness, and sweetness, and the different tastes and textures of each topping can also be enjoyed. Of course, the ingredients are also carefully selected. The natural yeast is made from lactic acid fermented Aso milk from Abe Ranch. The eggs are laid by hens in the Aso Hano area, and the flour is 100% domestic.

The prairie is the symbol of Aso. Many of them are used as pastures and are called "makino. The stationery shop's mizu-ki is named "Bungo no mizu," the watch shop's mizu-ki is named "Chikutaku no shizuku," and so on, in reference to the items sold by the stores. It is fun to go around Mizuki while visiting unique stores. Aso Shrine is also recovering from the Kumamoto earthquake. After visiting the shrine, be sure to stop by.
