Local specialty - lotus root

The soil in Shiraishi, where reclaimed land spreads, is heavy clay from the tidal flats of the Ariake Sea, making it suitable for growing lotus root cultivation. The early summer lotus root is crispy and firm in texture, while the winter lotus root is crunchy, chewy, and stringy. Shiraishi lotus root is often inquired about from all over Japan, but it is always sent after being coated with mud. This is to prevent them from drying out and to make them last longer. Mud is the lifeline for lotus root that grows in the mud.
